They say breakfast is the most important meal of the day. When you’re on vacation, that still rings true, except you shouldn’t have to cook it yourself. At these bed and breakfast spots around the North Fork, they aren’t merely offering a simple continental grab and go, but taking the second part of their name seriously.

Here are just a few examples of what North Fork B&Bs are cooking up each morning (though note, all are able to tweak breakfast to accommodate allergies or dietary restrictions). Get inspired for your own breakfasts, or book a room and leave it all to your hosts.

Sannino Vineyard Bed and Breakfast

Rooms here have sweeping views of Sannino’s vines, so you’ll wake up to the sun, grapes and chirping birds…but be quickly lured to the dining area by the aromas of breakfast. The menu changes day to day depending on the season, but fresh and local ingredients from the garden or farm stands in the area are always used. Sometimes it’s sweet, like challah french toast with Grand Marnier and a berry salad. Other times it’s savory — think a cheese omelet over a bed of fresh greens or a broccoli rabe and mozzarella quiche. And occasionally, it’s a little bit of both, like the avocado toast with sliced tomatoes and a side of Canadian bacon and a dollop of fig jam.

The Coffey House Bed and Breakfast

This quaint little getaway spot gives rustic farmhouse vibes with a beautiful yard to roam around in. Take a walk around while enjoying your morning coffee, but don’t wander too far or you’ll miss the three course breakfast to start your day off right. Guests begin with a fresh fruit parfait with homemade granola and honey vanilla yogurt. That is followed up by some straight-from-the-oven baked goods like banana bread, cinnamon rolls or vanilla scones paired with strawberry jam from Blossom Meadow Farm. Then comes the main event — the farm to table frittata. Usually made with whatever fresh ingredients are in season on the North Fork, this showstopper starts out with eggs from North Fork Egg Farm. The signature additions are goat cheese from Catapano Dairy Farm, roasted tomatoes from Sep’s Farm and basil from the inn’s own backyard herb garden. On the side comes a lightly dressed micro green salad from the Naked Farm and some maple glazed sausage links.

Cedar House on Sound Bed and Breakfast

At this rustic dream home with views of a backyard vineyard, you’ll enjoy a chef’s choice breakfast every morning. The first course (yes, there are multiple courses) is light, just a small taste to get your appetite up and moving for the day. Sometimes it’s a yogurt parfait topped with granola and fresh fruit. Other times, it’s a fun fruit salad. The main course will always fill you until dinner. Their signature is the Cedar House loaded potato. Baked potatoes are hollowed out, mashed and mixed with browned breakfast sausage, red pepper flakes and fresh parsley. Then they are baked again and topped with a quartet of double cheddar, mozzarella, provolone and a perfectly poached egg. Other mains for the weekend might be a corn beef hash, grilled portobello mushroom with poached eggs and fresh home fries or an omelet made with local North Fork ingredients.

The Stirling House

If you’re looking for quaint luxury on the waterfront, this is your bed and breakfast. Come for the breathtaking views of the bay, stay for the breakfast from trained chef and owner Clayton Sauer. The meal starts light with a berry parfait, Greek yogurt, local honey and homemade granola or maybe a baked pear with mascarpone cheese, honey and toasted almonds. But then things get serious with a crème brûlée-style french toast made with croissants, maple butter syrup and house sausage or a California breakfast burrito with avocado, plum tomatoes, scallions, three cheeses and lime served with a side of southwestern home fried potatoes. And in case you get hungry a few hours later, there’s always an afternoon snack offered.
